How To Prepare Baghrir – Moroccan Pancake

This article presents the ingredients and explains how to prepare Moroccan Baghrir (Moroccan Pancake) that Moroccans used to eat with hot Moroccan mint tea or coffee for breakfast or snack and they may also prepare it for celebrations breakfast such as Eid AL Fitr and Eid Al Adha.

Ingredients:

  • 500 g of fine semolina;
  • 4 tablespoons plain flour;
  • 1 teaspoon of bread yeast;
  • 1 teaspoon of salt;
  • 1 liter of warm water;
  • 2 packets of baking powder (14g).

Preparation Steps:

Pour the warm water into the blender and insert the semolina, flour, yeast, and salt. Then, blend until the batter is smooth and there are no lumps. After that, add the baking powder and blend again for a few seconds and leave the batter for one hour.

NB: You can also put all the ingredients in a bowl with an electric whisk instead of a blender.

Use a non-stick pan and place it over high heat and wait for the pan to be very hot to start pouring the batter on the pan. Then, change the heat to medium and leave your piece of baghrir to get cooked and have many holes on it.

Repeat pouring some of your batter in medium heat until you’ve used all of it.

Some advice:

you keep your hot piece of baghrir you just cooked separated until it is cold and you can also separate them with a tissue to avoid them sticking to each other.

Serve hot and you can top your pieces of baghrir with honey, chocolate, butter, olive oil, or anything else you want.
